This is a quick and simple recipe for a sweet, bright yellow, olive oil gel that goes well with lemon and chocolate desserts. It adds a hit of colour and an interesting flavour component to desserts. All you need for this olive oil gel is a few ingredients you likely already have in your kitchen, egg yolks, glucose, salt and olive oil. It is made a lot like a mayonnaise where we are emulsifying the olive oil into the egg and glucose mixture. The glucose however give this a super shiny and glossy finish which looks really lovely and smooth on plates.
