— DUMPLING WRAPPER —

Ingredients:

420g Flour
210ml water

Directions:
1. In a Bow , mix flour with water. If it’s too dry, add in a little bit more hot water.
2. Wrap the dough tightly in plastic wrap and let it sit for 30 minutes at room temperature.
3. Shape dough into a long log. Divide the long log into small dumpling dough pieces.
4. Take one piece of dough and press it to a round disc. Hold the wrapper with your left hand and hold the rolling pin with right hand.
5. Rotate the wrapper when moving rolling pin. Repeat the process, rotate the wrapper-roll and rotate the wrapper-roll. The wrappers will have thicker center and thinner edges naturally.

Dumplings — CHICKEN GYOZA—

Ingredients:

1 can of Chicken Broth
1 pound ground Chicken
1 tsp Ginger, minced
1/2 tsp Chicken Bouillon Powder
1 tsp Scallions
2 cup Frozen Minced Chicken Broth
1 tsp Soy Sauce
1/2 tsp Sugar
1 Whole Egg
Corn Starch Water Minx

Directions:
1.Frozen Chicken Broth and mince it (Frozen it day before).
2.Mix chicken, Ginger, Chicken Bouillon Powder, Scallions, 1 cup Frozen Minced Chicken Broth, Soy Sauce, Sugar, and
3.Egg in a large bowl until thoroughly combined.
4.Take one dumpling wrapper and add about 1 tablespoon of the filling in the middle.
5.Fold the skins, Repeat with remaining dumpling wrappers and filling.
6.Heat nonstick skillet ​over medium heat and add 1 tablespoon oil.
7.Add Dumplings and Corn Starch Water Minx. Cover and steam the dumplings about 5 – 10 Min.

Pan Fried Dumplings — PORK GYOZA —

Ingredients:
2 pound ground pork
1/2 tsp Soy Sauce
1/2 Ginger
1/2 tsp Scallions
1/3 tsp Salt
1/3 tsp Sugar
1 cup Frozen Minced Chicken Broth

Directions:
1.Mix pork, Soy Sauce, Ginger, Scallions, Salt, Sugar and Frozen Minced Chicken Broth in a large bowl until thoroughly combined.
2.Take one dumpling wrapper and add about 1 tablespoon of the filling in the middle.
3.Crimp together forming small pleats to seal the dumpling. Repeat with remaining dumpling wrappers and filling.
4.Heat nonstick skillet ​over medium heat and add 1 tablespoon oil.
5.Add dumplings and water. Cover, and steam the dumplings about 5 – 10 Min.

【Steamed Crystal Dumplings, a Dim Sum classic】

Directions:
