To bloom paprika correctly, sweat onions in lard, pull the pan off the direct heat, then stir in the spice. The residual heat, around 80°C to 90°C, is enough to dissolve the fat-soluble carotenoids without scorching the sugars. Reintroducing heat too quickly burns the paprika, turning it bitter. Immediately deglaze with stock or water.
Goulash (gulyás) is a soup, not a thick stew. It is a thin, broth-based dish with beef, potatoes, and caraway. Pörkölt is the thick, heavy meat braise cooked down until the liquid reduces into a concentrated, glossy gravy. Pörkölt relies on equal parts onion and meat by weight, with no added starch or flour.
Hungarian sour cream (tejföl) has a high fat content, typically 20%. To prevent curdling when finishing dishes like Chicken Paprikash (paprikás csirke), temper the sour cream first. Whisk a ladle of hot braising liquid into the cold sour cream before stirring the mixture back into the pot over low heat. Never boil after adding it.
Use shin, cheek, or chuck beef. These cuts are rich in collagen, which breaks down into gelatin during a long, slow braise at 85°C to 95°C for two to three hours. This gelatin thickens the sauce naturally, giving the dish its signature sticky, mouth-coating texture without the need for flour or cornflour roux.
Stock authentic Hungarian Édesnemes (noble sweet) paprika as your workhorse. It provides the deep red colour and mild, sweet flavour profile central to dishes like töltött káposzta (stuffed cabbage). For heat, blend in small amounts of Erős Pista paste or hot Csípős paprika. Avoid Spanish smoked paprika, as smoke profiles are not traditional.
