Makes 4 portions
1 ½ cups strawberries, quartered
1 Tbs sugar
Juice of half a small lemon
1 ¼ cups heavy cream
2 tsp sugar
½ tsp vanilla extract
1 ½ cups meringue cookies, crushed (store bought or recipe below)
5 egg whites
½ tsp cream of tartar
1 ¼ cups sugar
In a medium-sized bowl add the quartered strawberries; toss them in the lemon juice and sugar. Let sit for 30 minutes.
In the bowl of an electric mixer or large bowl with a hand held mixer beat the heavy cream, vanilla and sugar until you reach soft peaks.
Layer the strawberries and liquid with the whipped cream and crushed meringues. Serve with extra strawberries and crushed meringues.
