In this video we speak to Santosh Shah, recently appointed executive chef of Baluchi, at LaLit's London Hotel.

Santosh speaks to us about how he went from a small village in Nepal though his education and training in India, and eventual career in the UK, working at some of London's most prestigious Michelin Star Restaurant and chefs, such as Atul Kochhar at Benares and Raymond Blanc.

Santosh explains how Baluchi not only produces some of the best traditional and authentic Indian recipes in London, but how he is pushing the envelope in this cuisine and constantly adapting and creating new progressive dishes.
