Ingredients for enough sauce for 4 people (divide the proportion if you need less sauce)
250 grams of clarified butter
4 egg yolks (free range eggs)
20 millimeters of water
The juice of half a lemon (do not use limes)
1 or 2 pinch of Salt for seasoning
small pinch of cayenne pepper (optional)
