How to Make Vegan Scrambled Eggs Shaksuka, with The Gate

1 large onion chopped
1 red chilli chopped
I tesp of chopped garlic
4 ripe tomatoes chopped
1 tbsp sweet smoked paprika
0.5 tesp turmeric
1 tesp chopped coriander leaves
Salt and black pepper
Pinch of sugar
2 tbsp veg oil
1 pack silken tofu
Pinch of black salt (kala namak )

1 in heavy bottom pan fry the 70% of the onion, garlic and chilli with 1 tbsp of the oil till the onion is soft.
2 add the tomatoes, paprika and turmeric, cook for few minutes till the tomatoes are cooked .
3 in a separate pan cook the remaining onion with 1 tbsp of oil till soft , add the tofu and brake with whisk season with the black salt and 0.25m tea spoon of turmeric
Cook till you get light pale yellow scrambled tofu .
4.Add the tofu an top of the tomato sauce we made , add the remaining ingredients and cook 5 more minutes on low heat and cover the pan with lid .

Serve with crusty bread
