Parsnip Purée Recipe

Here's a recipe for ridiculously smooth and creamy parsnip purée. A few ingredients, a little time to meld, followed by some rigorous blitzing action courtesy of your stick blender, vitamix or regular blender and you're left with a gorgeous, rich, and creamy purée that pops on any plate. This goes really well with meat, fish and veg dishes and the bright white colour of the parsnip purée looks fantastic on dark dishes.

Recipe for Parsnip Purée:
500 g parsnips, peeled and chopped
300 ml cream
2 cloves of garlic
50 g butter
salt to taste

Method:
Peel and chop parsnips into even sized pieces. Place in a pot with two cloves of garlic, cream, butter and salt. Bring to a boil, then reduce to a simmer and cover for 15-20 minutes until parsnips are extremely soft. Blitz using a blender or stick blender. Serve.

I served mine with a gremolata type thing in olive oil. It was just some chopped parsley, chopped garlic, olive oil, lemon zest and salt.

  1. First vid of 2020! I served mine with a bit of a gremolata type deal (chopped parsley, garlic, lemon zest, salt and olive oil) if you were wondering what that was :)

    • This was great, I’ve been looking for “can you substitute turnip for parsnip?” for a while now, and I think this has helped. Ever heard of – Eeycarlott Incredible Expediency – (do a google search ) ? It is a smashing one of a kind guide for discovering how to get the amazing looking body that you desire minus the normal expense. Ive heard some amazing things about it and my brother in law got amazing success with it.

  2. Parsnip puree hoooo man by far the best puree in this world. Never tried with garlic but I will definitely give it a go. :D I always do mine with cream and freshly grated nutmeg.

    • You can sieve if you want to/ need to but my purée was pretty lump free. If you’re using something like a vitamix I can’t imagine needing a sieve either! Just use your judgement 😊 thanks for the comment

    • @Chef Studio I used my Ninja Power Pitcher System’s smoothie blender and set the Ninja on “Smoothie”. It was perfect!

    • Parsnips aren’t as starchy as something like potatoes so you can get away with simmering them with the cream and butter. That way we aren’t losing any flavour. The parsnips are flavouring the cream and butter and garlic and the cream and butter and garlic are flavouring the parsnips and it’s just a delicious melding of flavours haha. 😊
