Victoria Sponge Cake in the KYVOL AF600 Air Fryer
12 ounces self rising flour
12 ounces sugar
12 ounces unsalted butter, room temperature
6 eggs, lightly beaten
1 cup strawberry jam
½ cup caster/superfine granulated sugar
In a food processor add the flour, sugar, butter and eggs. Pulse 4-5 times until the mix is combined and there are no lumps.
Line 2 six inch cake tins with baking parchment and spray with vegetable oil (base and sides)
Divide the batter between the two cake tins.
Preheat the Kyvol air fryer on its preheat setting 400 degrees F for 5 minutes
Bake one of the sponges for 30 minutes. Remove to a cooling wire and bake the second cake.
Spread jam over the top of one of the sponges. Place the second sponge on top and sprinkle with the castor sugar.
